This week is National Vegetarian week, and I for one am going to do my best to be a veggie for the duration!!
Tonite we are having spaghetti with tomato, courgette and mushrom sauce....
Anyone got some good suggestions for quick and simple weekday veggie meals, as lets face it...we are all a bit pushed for time during the week and dont want to slave over hot stoves!!! :)

pasta is always great, bung anything you want in it, I like to add tommy soup to pasta as it makes it creamy
another great meal is a veggie medly and rice....... part cook veggies of your choice and stick some rice on to cook at the same time, make up a cheese rue (or cheat and open a packet ;) ) then just before the veggies are done, drain them off and mix in to the rue and cook for another 5 mins so they take on the cheese flavour, then drain off the rice and pop onto plates and stick the veggies on the top...a bit more grated cheese on top and ummmmmm :) yummy!
for a spicier version of the above, add a little bit of curry powder or chilli to the rue !
I've seen a great veggie recipe in the last month's Somerfield magazine:
--> Wholewheat spaghetti with lentil bolognese...it looks simple.
Carrot, celery, onion, garlic all chopped up (garlic can be crushed).
200 g / 7oz split red lentils, rinsed.
I can chopped tomatoes.
Veg stock cube, herbs of your choice.
400 ml water (to make up the stock cube) .
Just fry up the celery, onion, carrot & garlic for a few mins (5 or so). Add lentils, tomatoes, herbs and the sock cube made up with the water.
Bring it all to a simmer, partially cover pan and simmer for 20 mins or until lentils are cooked.
Serve with the wholemeal spaghetti cooked as per pack instructions.
I'd prob add veggie cheese to this too for sprinkling on top, but it sounds very nice and I shall try it this week :thumbs: .

If you like things spicy then why not go for Poppadoms, Tarka Dhal (Lentil Dhal) or Chana Dhal (Chick Pea Dhal), along with a portion of Bombay Potato with a lovely hot plain or garlic naan.
No recipe I'm afraid - just pop down to Tesco's ready meal department, buy, open packet, throw in microwave and Voila! Chompie veggie meal at your finger tips! :eatin: :blush: :lol:
I'm not very inventive (or veggie either) but I do love a lovely homemade macaroni cheese, really strong cheese for the sauce and loads of cheddar grilled on top :)
