Hi Everybody,
I am looking for a recipe for a simple but nice tasty soup that's quiet easy to make and does not require too many ingredients:)

As we are having quiet a lot of the family over for Christmas this year i thought i may start with home made soup i have seen plenty of recipes but i really need to know recipes that people have tried and tasted so any good suggestions would be very much appreciated:)

you cant get quicker than nigella lawson's quick minestrone soup, i have made it so many times i know the recipe off by heart:

tin of copped tomatoes or a tomato pasta sauce of your choice

750 - 1000 ml of hot chicken or veg stock

75 - 100g of small pasta shapes - your choice but make sure they are very small - vermicelli is great

tin of mixed bean salad, drained

put the hot stock and tin tomatoes/pasta sauce in a saucepan and bring back to the boil, add the pasta and the drained beans and cook until the pasta is done.

then eat.

if you have a lot of people over, just double the quantities.

if you leave this soup, the pasta swells up and it turns into a pasta and bean dish which is also great. its a winner however it turns out!

Bit off topic but not too much - Does anyone have any good recipes for a slow cooker preferably just vegetables and no tomatoes or cheese?

Its getting to that time of year when some warm nourishing food is needed. :cold:

P24 - this is off the top of my head - what about a nice selection of root veggies such as parsnips, carrots, turnips, along with some pumpkin/butternut squash, green beans, onion and celery, maybe some garlic, tin of mixed beans or a handful of 'country mix', chuck in the slow cooker with some veg or chicken stock and also some chicken gravy granules to thicken it up. dont add any salt as the stock will have sufficient, but maybe chuck in a few dried mixed herbs

i reckon that could be good :rolleyes:

That sounds great. Can you use frozen veggies - peeling and chopping is a bit of bind at the moment.

P - I often use frozen veg as I often don't have enough energy ro chop and stuff. You can even get frozen onion slices. Or failing that, 'eazy' onions in a can work to add flavour.

The simplest soup is a cup of red lentils, chopped carrot (use a tin or frozen if you want), handful or small tin sweetcorn (or frozen), onion, stick or two celery, veg or chicken stock to whatever quantity you like. Boil it all up for about 40 mins, blitz it if you can be bothered to, otherwise,just eat as it it :cool: . Simple, tasty and warming..

You can add frozen cabbage (really nice) and frozen green beans to it to. Anything goes, really :cool: .

Ive decided that's my best option as I can leave it to cook all day without worrying or setting fire to myself:rolleyes: and it will make at least two days worth of meals for me.

It will be really nice with home made bread (from the breadmaker). :)

This is my quick and easy chicken stew that can be turned into delicious chicken soup!

Serves 4

1lb diced chicken
Chopped up carrots, onions, parsnip, potato, leek, swede - whatever you fancy.
(if you want to cheat buy a ready diced and peeled bag from Tescos!;))
Cover with water and add chicken stock or stock cubes
Put in slow cooker and leave until you want to dish it up.

If you want it qucker, then get a large saucepan (pressure cooker without lid is ideal). Gently cook the veggies in butter for 5 minutes add the chicken, the chicken stock and cover with water and boil for 25 minutes and then serve.

To make into soup simply blend until it's smooth. If you fancy something special you can add a carton of double cream to make it really yummy.

If you have a cold/flu don't add the double cream as dairy is bad for colds. Try adding a few gloves of garlic to the veggies as garlic fights infection and makes you feel better - you will have stinky breath though!!

I have never tried that vegetable????:mellow:what is the taste like is it sweet tasting or a bland veg to add colour,,,confused lol:dry::lol:

hello kebea!

butternut squash has a sweet, kinda nutty flavour and does add a great colour to a soup. although you can cut it into chunks and roast it in the oven. the outer skin is quite thick and hard to cut through, then the flesh inside is very firm.

Yep i have seen this in the shops and asked what it was lol:eek: i may give this a go after all you never know if you like it until you try it lol:)

I love soup and make a huge pan full every week. Most odf the time I just throw things in a pressure cooker and see what its like. The last soup I made was delicious. I had bought a carton of Passata a while back and just left it in the fridge not really knowing how to use it. I knew I wanted it to use with pasta, but there was too much (I think 1 Ltr) anyway, I read somewhere you could use it in soup, so I chopped loads of carrots up with a large leek, some shallots and crushed some garlic. I cooked off that lot first before adding the passata and let it simmer. I added a small amount of ceyenne pepper just enough to taste, not much as I didn't want to have it too hot. It was lovely and I will definately make it again.
You could use passata with other veggies and even add some pasta to bulk it up?
