Can anyone tell me how to roast carrots, parsnips and onions?

I am doing that tonight !!!! :lol:
I just quarter the onions, and depending on the size of the carrots and parsnips, cut them in half usually is enough.If the carrots are baby ones they can just be left whole.If the parsnips are large they made need quartering.
Toss them in a little olive oil - flavoured oil is nice, or add a few herbs and pop in a medium oven until carrots are just tender. It varies but usually takes around 35 - 45 minutes. May need longer if other things are in the oven at the same time though.

Red onions are nice roasted and butternut squash i always sprinkle them with black pepper and do it just as sp said :)

i am always roasting veggies, peppers are lovely, garlic cloves, turnips baby corn, you name it i have tried it.
a sprinkling of balsamic vinegar over the veg adds a nice flavour, especially over onions and carrots, also when you finished roasting them you can squeeze lemon juice over them and it gives them a bit of zing.

Not much I can suggest, but all I'll say on the subject is ... honey roasted ;)
