Easter Simnel Cake :eat::eat::chef::chef:

Back to the recipes today, this one is lovely, but if you don't like marzipan, don't touch it.

150g/5oz butter
200g/7oz plain flour
½ teaspoon baking powder
Pinch of salt
150g/5oz caster sugar
4 eggs
100g/4 oz glace cherries
350g/12oz mixed dried fruit with added peel
100g/4oz ground almonds
450g/16oz Marzipan
70g/2oz Apricot Jam



Preheat over to gas 5/180c. Line an 18cm round cake tin with greaseproof paper then grease that with a little butter.

In a bowl sift together flour, baking powder and salt. In a separate bowl cream the butter with the sugar and stir in eggs, cherries, dried fruit, almonds and all the rest of the dry ingredients. Pour half the mixture into the tin and roll out a ¼ of the marzipan into a round and place on top of the mixture in the tin. Pour the rest of the cake mixture on top and then bake for 1 hour, reduce oven temperature to gas 3(160c) and cook for another 1 ½ hours. Cool in the tin and turn out. Brush the top with the apricot jam. Roll out half (the rest of the marzipan) of the marzipan into a round and place on top . (Optional divide the left over marzipan into balls and top the cake with them. Tie a yellow ribbon round the outside.

I did not bother with the ball things, I just used to roll the marzipan out bung on the top and what I did I went to a cake shop and bought some Easter Chicks and used to put them on the top as decoration.

I am not a fan of marzipan, but it does sound lovely! I think I'll do a cake for easter (I'm into this now!! :lol: )

I might try to make some choc brownies today - for the kids, not me!

Are you sure that the choc brownies are not for you, you mean you are not going to eat any of them :lol::lol::lol: or even lick the bowl out:lol::lol::lol:
