Ok lets tak about Easter, this recipe is hughly popular at work, with Hubby and my Next Door Neighbour and I used to make them every year in fact last year that was much moaning and nashing of teeth, when they did not appear.
Easter Biscuits:chef::D:coffee:
125/4oz Butter softened
125g/4oz caster sugar
1 large egg
175g/6oz plan flour
50g/2oz ground almonds
1 tablespoon of mixed spice
75g/3oz currants
Little melted butter and sugar
50g/2oz icing sugar
1 tablespoons lemon juice or water
Cream the butter and sugar until pale and fluffy. Add the egg and little at a time and beat well. (IF mixture curdles add a tablespoon of flour from the allowance). Add the flour, almonds, spice and currants and mix to form a dough.
Cover and chill for 15 – 20 mins. Preheat the over to 180/350/gas 4 and light grease two baking trays. Roll out the dough cut out 15 10cm/4in rounds. Brush with the melted butter and sprinkle with sugar. Bake for 15 – 20 mins until lightly golden. Leave to cool.
Mixing icing sugar with lemon juice or water to make a smooth paste and drizzle over biscuits to make a cross. (I found this quite hard to do, so I make the icing sugar a bit thicker and piped in on using a piping bag, but it does take practice)
If you do not like current just leave them out, they taste a bit like a hot cross bun but in biscuit form. Yum I am going to have a bash at converting them.
