Dedicated to ER59, here is one that you can eat.:chef::chef:

Strawberry Mousse cake:D

1 ¾ oz/50 g low fat spread
5 1/2oz/150g Digestives Biscuits, crushed
1 sachet of weight watchers strawberry & cream whip
1 sachet of wieght watchers raspberry and strawberry sugar free jelly
4 fl oz/125m Skimmed/Semi-Skimmed milk
250 g Pot of Quark

Line 8in/20 cm tin with greaseproof paper.
Melt low fat spread in a saucepan and tip in crushed digestives. Mix well and then put into the tin and flatten with back of a dessertspoon. The chill.

Make up jelly according to instructions, but only using 200 ml/7 fl oz of boiling water. Make the whip according to instructions with the milk. Whisk in the quark and add the jelly whisking all the time until smooth.

Pour mixture into the biscuit base and put back in the fridge for 2 – 3 hrs or until set.

Decorate the top with the strawberries.

The weight watches whip mix you can but in Tesco and Morrisons (in Tesco its near where they keep the angel delight and in Morrisions it was in the home backing section with the jellies). I use hartelys strawberry sugar free jelly, so don;'t worry too much about the jelly, I suppose you could use a normal angel delight, but will have to leave you to play with it. The Quark was near the cheese/cream cheese section and it is sole in 250 pots.

Obviously being weight watchers it is low sugar and low fat, so something that will not pile on the pounds if you are watching you weight.
