Portuguese Custard Tarts :eat::chef:

450/1lb of Puff Pastry defrosted if frozen
500 Carton Fresh Custard
2 tablespoons of vanilla extract
50g/2 oz caster sugar
2 medium eggs beaten
25g/1oz icing sugar or cinnamon.

Preheat oven to 190/375/gas 5. Roll out pastry on a light flour surface to a 31 x 41 cm/12 in x 16in (never worry about this just until the pastry is thin). Using a plain cutter cut out 12 circles and use to line a 12 hole muffin tin.

In a large bowl beat together the custard, vanilla extract, caster sugar and eggs and our the mixture into the pastry cases. Bake for 35 – 40 mins. Remove from the oven and allow to cool, dust with the icing sugar or cinnamon and grill for 2 -3 mins until sugar/cinnamon* has caramelised (*has gone brown). Keep an eye on them as you do not want the pastry to burn. Turn out and serve.


I think I can still have these occasionally, they are lovely my mother in law loves tham very much, in fact when she was in hospital and would not eat I made these and took some up to her and they were gone in a flash. Always planned to use a round tin and make a large one, but never got around to that. If you really want to be flash, you couldmake your own custard by following the directions on a Birds Custard Tin, that it was I will have to do, but it is much quicker and simple to use ready made. Mazza no chocolate melting again, but tomorrow it is Chocolate Mallow Pie.:lol:

Can I just check - is it a real muffin tin you need (like, really deep ones) or will fairy cake type/yorkshire pud bun tin do?

I am so glad you use ready made custard as that's yet another thing I am hopeless at - I gave up making it years ago and now only ever use the Bird's instant packet (just add boiled water ;) ) stuff .

Melted choc, custard and rice...I can't do any of them!!! :lol:

Does it work with instant ready to serve custard from a can?

I would say it would work with tinned custard P24, its just that fresh custard will taste a bit lighter.

once you have built up a repertoire of recipes, cooking is so much less stressful P24.

i hate thinking about what to eat every day, it really stresses me out.

BTW, I was asking a friend of mine how to cook basmati rice - it is so easy, and quick, the secret is to soak it in cold water for 30 minutes. then put it in a pan with seasoning, cover it with water (about an inch over the top of the rice) and it cooks in under ten minutes. i did it yesterday and it was ok for a first effort.:cool:

Its one of the only things I can do - rice
I always soak it to get the starch out then fresh water bring to the boil cover the pan and turn out the heat after around 10 minutes depending on how much you're cooking - if you want saffron or pilau just add the seasoning as it comes to the boil and stir.

We used to have a flip top bin in our kitchen at home with a sack of rice in it. Its cheaper to buy in bulk from Asian grocers and always there was a choice of either rice or mashed potato to go with the main meal.

I used to use the fresh custard that you buy in the chiller cabinet, I don't know about tinned custard, never tried it with that one but as I said I cant use that anymore so will have to make my own with sweetner. As to thinking about what to eat for me it is a nightmare, because not only do I have diabetes but also high chlorestrol, so anything low in fat will be high in sugar, anything low in sugar will be high in fat. Its a nightmare, but I have started to get receipes for me now, I actually have 3 that i use and have been successful, I thi nk i have already posted about the fruit cake, but I have tried the Strawberry mousse cake, and that was really nice, even hubby liked it!!! :rolleyes:and he hates strawberries:lol:

I have sort of converted a trifle, but it takes a lot of work to make it, because I have to make the sponge from scratch and use egg substitue and sweetner, it does not look very nice when I have got it out of the oven, but it behaves like a sponge and for trifle it does not really matter what it looks like. So sponge cakes with butter cream and jam filling are out for good.

To really make a yummmy trifle, I used to use, a swiss roll (plain no cream just jam) and also maderia cake, yummmm:) with a couple of tins to strawberries bunged on top of the sponge. Must stop now last time i posted receipe for Chocolate cake went out at lunch time and had to have a chocolate muffin and hot chocolate drink.:no: So my sugar went through the roof!:huh:

That is an absolute nightmare. I take my hat off to you, not sure how I could cope with all that. :(

The other thing I am keen on eating more of are lentils, my friends makes lovely lentils - they are small yellow ones from asian shops, anytime i make lentils they just end up in a complete mush, but these ones stayed whole - the secret - she soaked them first!

Sorry I started a new thread, but I thought as I had my chocolate cooking book with me I would give you the info on it, as I will be returning it to my friend tonight as the temptation is too great because it has receipes for milk and while chocolate in it, so too tempting and there are so many lovely receipes that I did not have a chance to try:(:(:(:( If you want the info its in the new thread called surprisingly Chocolate Cook Book, the receipt for the cake is in there on page 14. I sympathise Isis because im the same and you are so right foods low in fat are packed with sugar :rolleyes:
I just read your recipies and sigh i would love to try some of them :lol:

The trouble is er59 I did eat them and as the saying goes what you have never had you don't miss and what you have had you miss, but I will be posting the Strawberry Mousse cake, and it was delicious. So you can have a go at that as I had a very good reading the next morning of 4.1 so that has definately gone down in my new receipe book.

Mind you something good has come out of something bad I managed to loose 3 1/2 stone in weight, I actually only need to loose 1/2 stone as I was slight overweight, and did not get diabetes through what I was eating believe it or not. So I lost 3 1/2 stone in 3 months it was a nightmare clothes wise, because I was buying clothes and then putting them on after two weeks and they were too big, in the end I just brought belts and belted everything, but I am now stable. Well I have treated myself, we are I hope going on a cruise this year Ancient Odeyssey Island Star Cruises, so i have brought myself a backless dress from ebay it is made by a company called Cherlon if you want to have a look. My hubby's face was a picture when I put it on he looked something like :o and when I asked him did he like it he just nodded with his mouth open. It only cost £15.00 inclusive of postage and packing and I never thought in a "million years" i would be able to ware a dress like that, it is called Cherlon Velet black or blue Wedding/evening dress and it is backless apart from two thin straps that cross over at the back, and it has some sequins over the bust, it is lovely it does need to be shortened and I will shorten it near the time when we go. So out of something bad something good has come. :D

All my family on both sides are diabetic except me. They test away and it always comes back negative. I suppose its the luck or the bad luck of the draw.:(
Still as you say Isis from something bad has come something good. I hope you enjoy your cruise and your hubby enjoys the view.

Sorry got home last night and realised someone had asked me whether you can use a normal small cake tin or a muffin tin, sorry but it has to be a muffin tin, I think i got mine at tesco for about £3.00 in their value range of cookware.
