As Pancake day is just around the corner, do any of you have any favourite pancake recipes and fillings, sweet or savoury or do you stick to the traditional recipe? :)
I'm afraid I cheat and use a packet mix and add maple syrup but then I am not known for my cooking skills. I don't t oss them either...I couldn't be trusted they could land just about anywhere.:lol:

I love loads of fillings, but I often buy a tin of cherries [the sort that you can use in flans etc] which is lovely inside a pancake with cream or ice cream :D

Mascarpone cheese is another favourite with fruit or a squeeze of lemon juice

Plain old lemon juice and caster sugar is hard to beat too.

Now you've done it, P24, I really fancy one now :huh::rolleyes::lol:

I sometimes use pancakes as a change from cannalloni- fill them, wrap them up, and bake them in tomato sauce with a sprinkling of cheese. They are nice filled with broccolli in cheese sauce, or leeks cooked off in a bit of butter and garlic then mixed with ricotta and a grate of nutmeg. My favorite sweet filling is banana, chocolate sauce and whipped cream!

I love pancakes but hubby doesnt and its not worth making them just for me :) fav filling has to be basic lemon juice and sugar :D

I fancy some cherries and ice cream now sp - you've started me off:lol:

I used to like Crêpe Suzette but that was another lifetime ago.:huh:

P- if you want to be an even worse cheat....just buy a pack of ready made pancakes from Sainsbos - a bit pricey but saves all the legwork! (currently 99p for 6... ;) )

I love them, but I seem to spend hours at the stove :( . I find it real hard work :sad: . And I can never make them quick enough - they just get gobbled up immediately and I am lucky if I even get one :cry: ....:lol:

Thanks for the tip Mazza, It'll be ready made ones this year then :thumbs:.
Even if I use a pkt, they range from so thin they break as you get them out the pan to 1" thick pieces of rubber.:eek: I am only consistent in that they are all carp!:lol:

Tesco's here i come, ready made this year:lol:

I cheat too sometimes :blush: I bought a large container of the mix last year to use put it in the cupboard and forgot about :doh: I'd made my own instead :lol:

I love maple syrup but I think lemon juice and sugar is the best on homemade ones :thumbs:

I can never make them quick enough - they just get gobbled up immediately and I am lucky if I even get one :cry: ....:lol: I have found that too so I cheat and eat the first one before anyone else gets :lol: because the cook has to test the food first don't they? (Like picking at the chicken whilst carving it :whistle:)
