Help!
I need a foolproof easy to make Birthday cake recipe that I can make.(That makes it a hard task to start with):lol: It has to travel well and have no heavy beating of ingredients 'cos I cant do it. I've got a food processor, but I don't use it.:lol:
No chocolate, a nice sponge with buttercream and icing?
Can anybody oblige with a recipe?

How about a basic victoria sponge some jam buttercream and ready rolled icing most supermarkets sell some good cake decorations now either that or order one from the bakers ;)

:lol: I was going to suggest you cheat too - just buy a nice looking jam sponge from the shop and cover it with ready roll icing and cake decos (plastic footie players anyone?? !)
Shame no chocolate otherwise I'd just use chocolate spread as 'glue' and stick a whole load of smarties or choc buttons over the thing!!
(I can't cook a cake to save my life ;) . )

Oh Blimey! I took one look at the home page which flashed linguini with mussels and nearly died.:eek:I think I am going to have to buy one. I wanted to show how much I had improved but maybe I'm not quite up to the cake stage yet. :no:

It's not easy cake making. I make a terrific microwave treacle sponge, and fairy cakes are quite easy, but not really birthday material. I'd cheat too. you can get some great decorations in the shops for not much and it can look really cool.
I'd luv to be able to cook a chocolate cake P, but I have never been any good at cake baking...or custard making, or rice cooking.... sometimes, you just have to wave the white flag and cheat! :rolleyes: :hihi:

What about buying a ready made sponge mix, if I remember you just add water and beaten egg, I think that "Greens" make the best sponge mixture, then follow instructions on the packet, that is what I used to do. Then just mealt about 2oz butter in the microwave and add icing sugar and a splash of vanilla extract/essence (I think essence is cheaper) and mix until it goes like a soft cream chuck on one side of the sponge then on the other chuck jam in, we tried cherry once that was nice, and sanwich to two together, you can then either buy whice icing that you roll yourself or if you can get hold of the paper dollies put a paper dollie over the top of the cake then throw icing sugar on that lift the dolly carefully and low and behold you have a design on the top of your cake.
I did have the most wonderful receipe for chocolate cake it used to take about 5 mins to make 10 mins to cook and 10 mins to sandwich it together and decorate it. Everyone loved, but I have given the receipe away it uses Beligum Milk cooking chocolate and lots of it to. I will try and ask my friend to copy down the receipe for me and will pass it on, I know it had flour, eggs, coco powder and golden syprup and obviously sugar you put in all a bowl together and turned on the whisk, so simple but soo lovely and the filling was butter cream icing (see above) with the cooked chocolate poured into (take a bar and 1/2 of beligum milk chocolate put in a glass bow, fill a saucepan with water and plonk the glass bowl over the boling water and mealt the chocolate keep stiring it about) and then the rest of the left over chocolate was poured over the top and sort of drizzle down the sides. Obviously there were 3 bowls to lick out all with different chocolate, one was the left over cake mix, two was the chocolate butter icing and third was the chocolate bowl (a bit sickly that one 8-X but woth it) Yummm :sad: and I wonder why I have ended up with diabetes:errrm:
My Mother in law says that I am a cook (or was) when I had my 40th Birthday party I actually did all the cartering myself for 80 people (got up at 6:30 in the morning so everything was fresh) and also I did a surprise barbecue for Hubby's 50th for 35 people. I used to really enjoy cooking, now I am trying out receipes that are low fat low sugar, have nearly got the trifle right and can do a fruit cake and Goulash, but oh how i miss home made steak and kidney pie/pudding

The thing is, whenever I have had to melt cocolate over a pan of boiling water, it always goes crumbly...no matter how careful I am. So I gave up!!! Is there a trick to it??
The idea of using a cake mix packet :doh: . I should have thought of that - there you go P - that's your answer - a definite compromise!! :thumbs: .

why not type easy cake recipe into google! You'll get hundreds of ideas. I used to have one that was equivellant weights of flour/sugar and eggs but age has killed the brain cell it was stored in (and the spelling brain cell too!:eek:).

What I did was to put the chocolate in a bowl, and break it up into small pieces, like into two sqaures maximum you must use COOKING chocolate, you can use normal, but it is best to use cooking then put the glass bowl over the pan filled with water and then bring to the boil gradually, sort of stiring the chocolate as you go, so in other word "baby sit" the chocolate keep an eye on it, also you must make sure that the water DOES NOT TOUCH THE BOTTOM OF THE BOWL. I actually in the end bought a "porringer" its like a double sauce pan, so you have the top saucepan which fits into the bottom, I have not used it for a long time was thinking of selling it, but just can't seem to part with it. good luck. Ihave just thought of something, do not use supercook chocolate flavour chocolate its yuck, I used to buy Tesco Belgium cooking chocolate they do that in milk, plain or white, but I like milk best
I have some great receipes for the summer will let you have them nearer the time, e.g. Prawn & Pasta & Dill (or Parsley) Salad, Potatoes with garlic and rosemary (these can be done on a barbecue and also in the oven as well) also going to have a go at making strawberry mouse cake this weekend will let you know if it is any good, but just remember the stuff i make now is low fat/sugar. Also got a receipe for coronation chicken which I need tol muck around with so that i can eat it, will let you know how it turns out.

Im no good at melting chocolate over boiling water either , my son got a chocolate fountain for christmas and you have to melt the chocolate first!! The best way for me to do it was to put it in the microwave for a minute , keep checking it till you can stir it and its done :)

I think we would all like that cake recipe Isis! I am grumbling at the thought of it!
I love hearing people's recepies, they are usually so simple and not as traumatic as you imagine to make a meal that looks amazing but takes no time at all.

I'm going to 'make' one out of an instant mix as you said Isis and then buy a posh one from Marks too (I have a feeling the instant easy one will not be easy for me- trust me on this;))
Your recipes sound great Isis as you can probably guess I am no maestro in the kitchen (or any where else really) :lol: so any easy recipes for an aging amateur are going to go down pretty well :thumbs:
My OH is still in shock from the onslaught of home cooking he is sampling, and said he can't make out whether I am suffering from a personality disorder or that I've doubled the life insurance on him.:lol:

Hi Stonehenge, yes have emailed my friend and she is giving back the book with the recipe in it, have also been thinking that I have my own personal recipe book, i know that I stil have the recipe for "Jaffa Cake Pudding" and "Chocolate Mellow Pie" but be warned these are very rich and potentailly sickly desserts 8-X. So a little at a time, will have a look around at the w/e and see what I can find. it may be a case of one recipe per day.
That was my trouble was the desserts I love chocolate I was/am a choco-holic that is why I now eat diabetic chocolate any more than 3 pieces and its :toilet: so I have it controlled now, well sometimes, please don't mention the Chocolate Muffins :whistle: , what chocolate muffins?:shutit:
Ahhh, you see, I used Dairy Milk and I am pretty sure I made the bowl touch the already boiling water before I put the chocolate in...no woner it always went Pete Tong and all I was left with was a very nasty mess of poor quality flake type chocolate!

some people swear by adding a small knob of butter in to stop it going cracky
take it off before its completely melted, a bit like scrambeled eggs, take it off before its fully done and its own heat will finish the job for you ;)
