View Full Version : Low fat/Low Sugar Fruit Cake

Hi
This is a receipe for diabetics and/or people who watch their weight

12 oz of Mixed Fruit
4 oz Liquid (either water, low gi orange juice or milk, i use losw gi orange juice)
4 oz marg (I use vegi marg)
8 oz self rasing flower
1 egg (beaten)

Put the mixed fruit, liquid and marg in a big glass bowl and bung in micro for 10 mins. Leave this to cool. Once fruit mixture is cool add the self raising flour and the beaten egg and mix together, it may be quite hard to mix, what i do is add a few extra drops of orange juice to make it easier to mix, then bung it the oven on gas mark 2/3 for 1 hour. The cake is a little dryer than normal fruit cake, but for a diabetic it is heaven. This will be my christmas cake this year, obviously uniced and no marzipan. But still nice.

2 oz of marg (I use vegi marg)
2 oz of soft Muscodae suggar ( I think that is how you spell it)
4 oz Wholemeal flour

4 large cooking apples
1 punet of Blackberries

Stew apples in the normal way, except do not add sugar add 2 tablespoons of sweetner.

Rub the marg into the wholemeal flour, until it is like bread crumbs, sometimes you need to add more flour,as it can be quite greasy to the ouch and then add the sugar and give a good stir to distribute the sugar.

Place your cooked apples in a dish and add the blackberries on top, cover with the crumble mixture and place in the over, well for about 40 mins or until the top is cripsy.

The crumble will have an almost carmel favlour to it, and i have had some really good low sugar readings with this receipe, i have found that there is enough their for a very larg crumble which will last me a week.
