OK, now the goldfish problem is sorted and the MU household is getting back to normal (well, normal in our terms !!! :blink: ), I keep looking at the butternut squash I impulse bought in Tesco yesterday and wondering what the heck do I do with it?

I've checked out some recipes online and it seems you can make it a savoury or a sweet dish. One says it's like sweet potato. If that's the case, do I use it INSTEAD of ordinary potato or as a side vegetable?

Anyone tried it and can let me know what it's like and when to use it?

I have a lovely recipe for butternut squash soup i will post it later.

I dont think you can use the squash as if it were potato, apart from making soup with it I have peeled it, and roasted in nice big chunks in the oven and it is delicious. i suppose if you did roast it up in the oven then mashed it up it would kinda be like mash - worth trying!

one tip - use it up while it is still fresh because as it gets older the skin gets really tough and much harder to peel.

hi mu

i always use butternut squash roasted cut into cubes with carrot courgettes and nice chunky wedges of red onion or any other veg that takes your fancy
drizzle olive oil onto it loads of black pepper and roast in the oven its nice with any meat :)

I brush the skin with a little olive oil then put in the oven on a baking tray for about 30 minutes.I then cut it open,scoop it out and mash it like swede.Lovely with a roast!! CN

I'm a big fan off butternut squash soup too - fantastic!

I like the look of that soup Sapph! :D

I only used butternut squash once and found that I couldn't cut the skin off it so it really put me off ever using it again...however, I now know thanks to Annabel's tip up there that it was due to it being at least 6 months old (probably almost a year old if I am honest :blush: ), hanging around in my veg draw for that long! :wow: In my defence, I bought it on impulse and had no idea what to do with it! :lol:

I'll try that soup though, sounds lovely :) .

Thanks all. I shall use it as a roast vegetable tomorrow night

(off to son's in laws for official Iranian New Year celebrations this evening so don't need to cook tonight)

I am inspired by these recipes, I think I will go and see if I can get a squash in Sainsbo's at lunch time! :thumbs:

Yi win,

The food last night was excellent! Lots of sweet pastries, nuts, chocolate etc. as a starter (!?!). Then salmon coated with garlic and saffron with rice flavoured with coriander. (And some saffron coated roast chicken especially for my son who doesn't eat fish!). Some salad and pickled vegetables (red cabbage, a mix of cauliflower, carrot etc.) on the side.

Then cheesecake for pud....
