View Full Version : Carrot and ginger soup

Method
Heat oil in a large pan. Add in onion, carrot & ginger. Let cook for 5 minutes to soften the onion.
Mix up vegetable stock using water and stock cube. Add to pan and bring to the boil. Cover saucepan and let simmer for 35 minutes so that your carrots are nice and soft.
Pour contents of pan into food processor and blend, adding more water if needed.
Garnish with basil, salt and pepper if needed, and serve.
I have just made this for lunch and it was superb... I can practically feel the vitamins working on my cold!!!!

Sounds nice Phantos - and glad you're beginning to feel better.

I might just make some myself shortly. Me and the dog have just spent a very cold hour or so in the local park at the official opening of a new play facility. The dog is absolutely fine what with her fur coat, but I am chilled to the bone - it's a bitter east wind here on the south coast today!

That is a feb idea - I have been virtually living on carrot and lentil soup lately and adding ginger will be just perfect - thanks for the tip :thumbs: .

I like that it's not only dead easy and healthy but really cheap if you're on a budget!

I usually make the same soup but with Corriander instead of Ginger + I add potatoes too (to thicken it up, makes it even cheaper to make). Going to give Ginger a try next time though, sounds yummy.

Ooo yum, I just made a pan - delicious :D .

I can feel it doing my liver a huge favour! :thumbs:

Really warming for this time of year (I also added a pinch of chilli flakes to my bowl - even more warming! :D )
