Our tomatoes have done amazingly well this year, but now they are all beginning to ripen at the same time :bigeyes: . Apart from eating them with every meal and giving them away by the bagful as fast as we can, by the end of this week I could open my own greengrocers.

So, bare in mind I am an UNdomestic goddess :blush: has anyone got a nice tomato soup recipe? Nothing too fancy mind ;)

Here (http://www.deliaonline.com/recipes/classic-fresh-tomato-sauce,1161,RC.html) is a link to the Delia Smith recipe. I'm afraid that I can't give a personal recipe as none of the DG household likes tomatoes - sorry! However, I'v always found that following Delia gives great achievable results!

Only 2 of us eat tomatoes. Mr.sp insists on growing them and nurturing them each year and then doesn't eat them anyway :unsure:

If I make soup 2 more in the house will eat it though :thumbs:

I must be having a funny moment as I have just made chicken liver pate from scratch :o . Haven't done that for years :blush: . I'll be making jam next - that'll confuse my family :lol: :bigeyes:

Hi SP, this isnt for soup, but maybe you will like it nonetheless...

its in this month's Sainsbury's Magazine, funny enough we are having friends over on Sunday and I am going to give it a tryout on my veggie friend:

Baked Tomatoes with Tarragon

(Serves 4 as a light lunch or accompaniment)

50g soft butter
700g medium tomatoes, halved
1 large clove garlic
1 x 200g pot of creme fraiche
the leaves from 4 bushy sprigs of tarragon
salt and freshly ground black pepper

preheat oven to gas 6/200c(180c if fan)

rub the butter around the inside of a shallow baking dish into which the halved toamtoes will fit in a single layer season them generously with salt and black pepper

peel and slice the garlic thinly and tuck the slices in and around the toms.

bake for about 45 mins until the toms are soft and bubbling

melt the creme fraiche in a saucepan over a moderate heat. tear the tarragon into small pieces and stir it into the creme fraiche together with a grinding of salt and pepper.

remove the tomatoes from the oven and preheat the grill to its highest setting. pour the seasoned creme fraiche over the toms and grill for 5 mins until bubbling and browned.

then serve !!!!

the other thing you could do, is make a big batch of tomato sauce which you can then freeze in bags, and defrost as and when you need sauce for pasta, or anything that needs a tomato base.

I love pasta and did consider pasta sauces too. Wish I had a bigger freezer! :(

Mr T's Spaghetti Sauce (Secret family recipe-don't tell anyone!)

Beef mince,
pork mince,
tomatoes,
tomato puree,
onions,
olive oil,
glug of white wine (Soave is best)


Olive oil in a pan,

Add finely chopped onions and tomato puree,

Add beef and pork mince,

add tomatoes and squash down or blend beforehand to make a pasata sauce,

add wine.

Cook and simmer for 2-3 hours.

Freezes well.

To cook, one big spoon each of the sauce into a warm pan

Cook spaghetti and add the pasta to the sauce, never the sauce to the pasta!

Sprinkle on cheese.

Each meal tastes stronger then the last, the meat just melts and it is really filling.

One batch does all 3 of us four meals.

I just wanted to say, I made the Baked Tomatoes with Tarragon yesterday for my friends for dinner and it was absolutely lovely :eat: :eat:

we scoffed the lot :gathering: and i wish i had made a larger amount :eatin:

Dont go mad with the Tarragon though, just a hint of it is very nice indeed! :)
